According to its website, the restaurant's menu offerings include beef brisket, pulled pork,
"All of our protein products come in just undoctored, raw," James said. "We trim them down in-house, we dry-rub them in house. We smoke them with a blend of hardwoods. With brisket, it goes 18 hours straight."
The restaurant also features a selection of 15 regional barbecue sauces, with recipes based on James' travels.
